Vegetarian Sloppy Joes

I wasnt sure about these at first, but they were sooo Yummy!!

1 cup of brown lentils rinsed and drained
2 1/2 cups of water
2 teaspoons of brown sugar
1 teaspoon of salk
1 small can of tomato paste
1 tablespoon of chili powder
2 teaspoons of dried mustard powder
1 tablespoon of cornstarch
2 cloves of chopped garlic
1/2 cup chopped green pepper
1/2 cup chopped onion
1 additional cup of water

Bring the 2 1/2 cups of water to a boil. Add the lentils turn down to a simmer and cover. Cook for about 50 minutes or until lentils are done.
While the lentils are cooking mix together the brown suger, salt, tomato paste, chili powder, mustard powder, 1 cup of water and the cornstarch. Mix together well and set aside. If you like your sloppy joes a little spicy you could add some crushed red pepper or hot sauce..

In a pan saute the peppers, onions and garlic until they are soft.

Once the lentils are finished cooking add the cooked veggies and the sauce. Make sure it is mixed well and heat for a few minutes. Once it is nice and hot serve on a hamburger bun with a little yellow mustard or it would also be good over some brown rice!

ENJOY!!!
